Shop local, buy what’s in season

Buying locally available produce is one of my favourite things to do. It’s the pocket friendly way to do things.

I typically wait for produce to be in season and then buy them. Imported vegetables like cauliflower and broccoli are expensive, so why not wait till they’re in season?

My favourite ‘always in season’ vegetable is Ugu (pumpkin leave). I throw this in my smoothies, eggs, vegetable mix, Fonio…. Today I share a simple way I enjoy Ugu as part of my breakfast – eggs on greens. It’s such a simple recipe and it can be upgraded in so many ways.

I love the versatility eggs on greens – perfect for breakfast, lunch or dinner. You can eat this alone or pair with your favourite starchy vegetables. My children love this too, they’ll ask for it to made for them – such joy 😊

I do hope you’ll try eggs on greens. Till my next post….
