I have always read about vegan meals but never paid much attention to it. A few weeks someone asked if I could help with vegan meals and I thought why not, after all I love experimenting with food… I looked up a few recipes and decided to tweak them slightly. There’s no way I won’t taste what I make, so I made enough for two. That week, I made stuffed bell peppers, baked sweet potatoes with veggies, grilled plantain with veggies and salads.
My favourite of them all? The stuffed bell peppers. Absolutely amazing, they were sooooo delicious. I had to try stuffed bell peppers as I recently fell in love with them, I had made the cheesy version filled with minced beef a few weeks ago. In my opinion, the vegan version is way better. I love this recipe and thought to share.
I have used Fonio in this recipe. Fonio is gluten free whole grain, an excellent source of vitamins and minerals. The health benefits of Fonio include decreasing the chances of cardiovascular issues like heart disease, detoxing the body and boostsing energy levels.
If you do not have Fonio available, feel free to use bulgur, couscous, quinoa or rice.
* I have had this thrice in the last two weeks and I am still in love with them. I replaced the tomatoes with homemade marinara once and it was super delicious.
