One great way of eating healthy on a budget is to have meatless meals. The idea is to load up on whole grains – fibre filled and alternate sources of protein. This post is not encouraging you to go vegan or vegetarian, just encouraging you to embrace eating less meat. Think of adding whole grains, fruits, vegetables, nuts, seeds, beans, and soy products to your diet.

The focal point for many of us is protein. Meatless protein sources include
Beans
Lentils
Peas
Chickpeas
Green beans
Mushrooms
Soybeans
Peanuts
Tofu
Cheese
Eggs
Add these to a stir-fry and serve with starchy vegetables or grains and you are good to go. So many combos to explore out there.

One of my favourite meatless meals is the beetroot & mushroom salad. Anyone who knows me knows that I love beets, they are packed with nutrients and a great source of fibre and iron. Salads are typically a go meal for me – the base is normally a mix of lettuce, carrot and cabbage. Today, I share the beet & mushroom salad recipe with you.
